Executive Chef Yannis Rokanas
At Cremnos, our focus is on local, seasonal produce and close collaboration with Cretan farmers and producers. Respecting the ingredients and minimizing food waste are at the heart of our cooking. I am inspired by the deep history of Greek gastronomy. By combining traditional recipes with contemporary techniques, we create dishes that feel both familiar and new. For me, flavor always comes first but so does creativity. The kitchen is a place where we’re never afraid to experiment, always pushing to bring something different to the table. Food is about connection. Around the dinner table, we come together, share, and create memories. That’s what drives me every day. Cremnos celebrates Crete in many ways, its land, its flavors, its soul.
